Aromatic sesame oil and spicy Vietnamese sauce Sriracha are added at the end for maximum impact.<\/p>\n<div>\n<div>\n<h4>Changhai\u2019s Shrimp Soup<br \/>\nIngredients: Serves 4<\/h4>\n<p>1\/4 pound shrimp, peeled and cooked<br \/>\n2 1\/2 cups chicken stock*<br \/>\n2 slices ginger, smashed<br \/>\n2 scallions, smashed<br \/>\n3 tablespoons tomato paste<br \/>\n1\/8 teaspoon pepper<br \/>\n1\/2 teaspoon salt<br \/>\n1\/4 cup water chestnuts, sliced<br \/>\n5 mushrooms, sliced (or \u00bc cup canned)<br \/>\n1\/4 cup green peas<br \/>\n2 teaspoons cornstarch plus 1 tablespoon water for dissolving<br \/>\n1 teaspoon sesame oil<br \/>\n1 tablespoon sherry or Chinese cooking wine<br \/>\nSriracha to taste<\/p>\n<p>1. Cook shrimp in a separate pot and reserve.<\/p>\n<p>2. Bring chicken stock, ginger and scallion to a boil. Lower the heat and simmer for 2 minutes. Remove the ginger and scallions.<\/p>\n<p>3. Add tomato paste, salt and pepper. Simmer for another 2 minutes.<\/p>\n<p>4. Slice mushrooms and water chestnuts (not too thin).<\/p>\n<p>5. Add shrimp and vegetables and cook until mixture just begins to boil.<\/p>\n<p>6. Dissolve cornstarch in water and slowly add to soup, stirring constantly. Simmer for another minute and then turn off the heat.<\/p>\n<p>7.
