I hope to catch up with a photo log of our time there. I think I had a bit of writer&#8217;s block after the publication of\u00a0<em> My Japanese Table<\/em> in September, so I am picking up the blog here in Italy.<\/p>\n<p>It is nice to back in Rome where we will be \u00a0for the next 2 months. \u00a0It is early spring and the weather is beautiful. I have finally adjusted \u00a0and have stopped trying to bow to everyone and am substituting si for hai! \u00a0We have a small studio apartment at the Residence Sacconi in the northern area of central Rome; just 5 stops on the tram to the historic center. \u00a0It has a tiny galley kitchen, about 1\/3 the size of a walk-in closet, with windows\u00a0on two sides so the light is great.\u00a0\u00a0I love this little set-up with its narrow \u00a02-burner stove top. I have 4 pots including one for pasta, of course, and an 8-inch frying pan.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-2838\" title=\"IMG_7287\" src=\"http:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7287-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7287-225x300.jpg 225w, https:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7287.jpg 480w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/p>\n<p>I can cook, wash \u00a0the dishes and reach everything in the cupboards and dorm-size fridge without extending my arms! I shop daily and cook almost every night &#8212; my kind of fun!<\/p>\n<p>The windows look out onto carabinieri barracks, a restaurant with specialties from the Trentino region and a wonderful Italian bar\/caffe owned by Jesus &#8211; that is his name and it is written on his forearm too. He lifts the metal door at about 5:45 AM. Customers begin coming at about 6:00 AM for their morning shot of espresso &#8211; about 1 tablespoon of the thickest darkest Java, knocked back in seconds. \u00a0He has pastries for breakfast, panini for lunch and drinks at the end of the day.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-2845\" title=\"IMG_7280\" src=\"http:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_72801-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_72801-300x225.jpg 300w, https:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_72801.jpg 640w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>Two steps from our residenza is a green grocer run by handsome young men from Bangladesh. It is carciofi (artichoke) and mandarin orange season.<\/p>\n<p><a href=\"http:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7321.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-2834\" title=\"IMG_7321\" src=\"http:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7321-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7321-300x225.jpg 300w, https:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7321.jpg 640w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><a href=\"http:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7319.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-2833\" title=\"IMG_7319\" src=\"http:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7319-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7319-300x225.jpg 300w, https:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7319.jpg 640w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>I am definitely going to try making the artichokes. \u00a0I can buy them whole, as above, or cut myself some slack and purchase them pre-trimmed \u00a0at the outdoor market that pops up every Friday. \u00a0Here they are floating in lemon water.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-2847\" title=\"IMG_7130\" src=\"http:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7130-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7130-300x225.jpg 300w, https:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7130.jpg 640w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>I got \u00a0inspired the other day to make \u00a0giardeniera, the Italian mixed vegetable pickles after\u00a0seeing pyramids of \u00a0hefty heads of cauliflower, red peppers, carrots and celery.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" title=\"IMG_7307\" src=\"http:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7307-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" \/><\/p>\n<p>The colorful combination reminded me of how much we like this vinegary melange \u00a0and how easy it is to make. Besides garlic and dried red pepper flakes, bay leaves are also used for seasoning. \u00a0 I went to the local store to buy a package of bay leaves, alloro in Italian, and \u00a0a woman standing next to me, pointed to the bushes lining the street, &#8220;that&#8217;s where I get mine, \u00a0just wash them very well,&#8221;she said.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-2850\" title=\"IMG_7336\" src=\"http:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7336-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7336-300x225.jpg 300w, https:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7336.jpg 640w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><br \/>\nSo I picked a few!<\/p>\n<p>My \u00a0version is made with a sweet and sour vinegar mixture and no addition of olive oil to the jar. \u00a0That can come later if you wish.I usually will make several quarts of pickles, but with little space for storage I made \u00a0just one jar of \u00a0approximately 3 cups jar \u00a0used a variety of veggies.<\/p>\n<p>Although it is a little more of a fuss, I set a pot of water to boil and cooked the vegetables in seriatum, one after the other. I do this because the vegetables have varying cooking times and this method helps them retain their distinct flavors. \u00a0I reserved the nutritious cooking water and used it as the stock for \u00a0a vegetable soup with chicory and borlotti beans the next day.<\/p>\n<p>RECIPE<\/p>\n<p>Giardiniera<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-2842\" title=\"IMG_7300\" src=\"http:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7300-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7300-300x225.jpg 300w, https:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7300.jpg 640w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>&nbsp;<\/p>\n<p>Makes about 3 cups<\/p>\n<p>2 tablespoons + teaspoons salt<\/p>\n<p>1\/4 large head of cauliflower (1\/2 pound), broken into florets<\/p>\n<p>2 carrots, cut into 1-inch thick slices<\/p>\n<p>1\/2 pound green beans, trimmed and cut in half<\/p>\n<p>2 stalks celery, trimmed and cut into 1\/2 inch chevrons<\/p>\n<p>1\/4 red pepper cut into 1\/2 x 2 inch strips<\/p>\n<p>1\/2 pound peeled cippolini onions<\/p>\n<p>1 1\/2 cups white wine vinegar<\/p>\n<p>3\/4 cup sugar<\/p>\n<p>2 teaspoons salt<\/p>\n<p>1-2 teaspoons dried red pepper flakes (or red pepper and parsley flake mixture)<\/p>\n<p>3 garlic cloves, cut into fourths<\/p>\n<p>3 -4 bay leaves<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-2852\" title=\"IMG_7282\" src=\"http:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_72821-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_72821-300x225.jpg 300w, https:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_72821.jpg 640w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>1. Sterilize a large quart size glass jar and lid, by filling with boiling water. Pour out the water and set on a clean kitchen towel, face down until you are ready to use.<\/p>\n<p>2. Have on hand a large bowl of cold water. In a large saucepan, bring 8 cups of water to a boil and add the salt. \u00a0Add \u00a0the cauliflower to the boiling water and cook for 3 minutes. With a slotted spoon transfer the cauliflower to the cold water bath. \u00a0Then transfer to \u00a0a colander to drain.<\/p>\n<p>2. Continue to cook each vegetable separately, setting each into the cold water (refresh the water along the way) and transferring to colander.<\/p>\n<p>Carrots and green beans &#8211; 2 minutes<br \/>\nCelery and red pepper &#8211; 1 minute<br \/>\nCippolini &#8211; 3 minutes<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-2840\" title=\"IMG_7293\" src=\"http:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7293-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7293-300x225.jpg 300w, https:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7293.jpg 640w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>3. In a separate small saucepan add the vinegar, sugar and 2 teaspoons of salt. \u00a0Heat on medium low until the sugar has completely dissolved.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-2839\" title=\"IMG_7290\" src=\"http:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7290-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7290-225x300.jpg 225w, https:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7290.jpg 480w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/p>\n<p>4. In a large bowl add all the vegetables and mix with red pepper (or red pepper\/parsley mixture if using) and toss with a spoon.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-2841\" title=\"IMG_7296\" src=\"http:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7296-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7296-300x225.jpg 300w, https:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7296.jpg 640w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>5. Pack the vegetables into the sterilized jar, gently pushing them down. \u00a0Add the vinegar mixture.<\/p>\n<p>6. \u00a0Add the bay leaves and garlic slices and push them down into the vegetables with tip of a knife or chopstick.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-2843\" title=\"IMG_7302\" src=\"http:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7302-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7302-225x300.jpg 225w, https:\/\/www.cookingatdebras.com\/eng\/wp-content\/uploads\/2012\/03\/IMG_7302.jpg 480w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/p>\n<p>7. Secure the lid on the jar and place in the fridge for \u00a048 hours.
